Best Cookies

Eva’s best cookies–so far~~

Okay, this seems like a really strange post for me to be even considering. But while I was trying to catch up with blog friends I kept wishing I really could give everyone some of these cookies I’ve been experimenting to get just ‘right’ for myself.  These are cookies that fall into the full meal in themselves deal. Cookies that you want to keep eating and won’t make you sick. Or actually my goal is create cookies that won’t make ‘me’ sick by consuming one or more due to food allergies.  So, since so far it is impossible to share hard copy food via computer technology  I can do the next best thing and share the recipe as it currently stands. If it sounds  ‘good’  to you then bake them and eat until you can’t stand them.  If you experiment and manage to improve them in some way, then DO TELL me about it! LOL.

The stuff you need:

3 1/2 cups whole wheat flour

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

2 sticks of BUTTER

1/2 cup of olive oil

1 teaspoon vanilla extract

1/2 cup of vanilla or plain yogurt

1 cup of white cane sugar

1 cup of loosely packed dark brown sugar

2 cups oatmeal–NOT the instant variety

1 cup coconut

1/2 cup pecans

1/2 cup cashews

1/2 cup macadamia nuts

1/2 cup dried cherries

1/2 cup golden raisins or dark if you prefer

1 cup semi sweet chocolate morsels

Sea salt

Mix the flour, salt, baking soda, and baking powder together in  one bowl.

Mix the butter, sugars, olive oil and vanilla extract together in another bowl.

Mix the ‘wet’ and ‘dry’ bowl contents together.

Add the oatmeal.

Add all the nuts, fruits, and chocolate.

On ungreased cookie sheet, bake at 350 heat–depending on your oven and the size of your cookies–10 to 12 minutes–until golden brown. While still hot sprinkle lightly with coarse Sea Salt.

NO eggs allowed!

No Barley Flour used.

No beet sugar added.

Oh Lynn, that’s the idea–a meal in a ‘cookie’–oh yeah. Depending on your tastes they can fit that bill. grins

Hey Davie. Did you make ’em? Did they fill the yum yum need in your tum tum?

  7. November 11, 2009 at 10:56 am

Damn allergies. My son can’t eat gluten (wheat) or casein (milk) and I probably shouldn’t eat wheat. You have so many ingredients – actually looks pretty healthy. I could substitute gluten free flour for the wheat flour. The oatmeal – I think we could get away with that (some say it has gluten, some say no – that it is just in the processing).

    • November 19, 2009 at 7:59 pm

Hi Gabrielle. Ah allergies–yes, this is my response to my own food allegery issues. So feel free to substitute or eliminate whatever doesn’t agree with you. Oatmeals are not all the same. Let me know how/if you improvise and how it turns out for other folks with similar issues. cheers!

I would want to try these, but I have a few questions. We don’t have sticks of butter, so how mush is that? And how much is a cup really??

P.S:I’ve left you a challenge at my blog, please check it out 🙂

this cookie recipe reminds me of ‘monster’ cookies. you know those? with basically every kind of ingredient. don’t think they had this many though. looks like a good recipe to try. 🙂

    • November 6, 2009 at 5:05 pm

Hey Otto! I think you’ve just ‘named’ da cookies! Otto Monsters! Oh yeah. Thank you. If you like the ingredients added then you’re good to go for baking up a batch–it makes a lot! Wonder what Arna will think of them. Hmm?

Oh now, Chefie and your euphoric nutmeg! Ahh well others can explore the joys of nutty-meggs but not moi. Am allergic to it. Alas. But–don’t let that stop YOU from tossing it into the mixing bowl!

Oh just beg, borrow or steal someone’s kitchen for a few hours, break out your favorite libation and mix up a batch–YES, MIX by hand–no electric beaters employed. Bake ’em up, Blissbait and maybe they’ll inspire you in ways you haven’t considered yet. Don’t wait to enjoy a taste of heaven.
      Namaste back at you!
